RECIPE OF THE MONTH:

CORNUCOPIA SALAD

Greens – ½ Head Lettuce & ½ Romaine Lettuce (can also use spinach)
3-4 Chicken Breast (cooked & cut into small pieces or omit for regular salad)
1 Avocado - Diced
1 Apple - Diced
1 Cup Celery - Diced
1 11oz. Can Mandarin Oranges - Drained
½ Cup Gorgonzola or Blue Cheese - Crumbled
¼ Cup Dry Cranberries or Dried Cerries
4 Green Onions - Chopped
½ Cup Sugared Almonds or Walnuts

Dressing:
2 TblsWhite Whine Vinegar (Can sub Red Wine Vinegar)
2 Tbls Sugar
1 Fresh Parsley - Chopped
¼ Veggie Oil
½ tsp Sald
½ tsp Peppe

Shake Well Before Pouring over salad...dress salad JUST before serving to avoid wilting.

* This salad can be a little expensive, however, well worth it in the end. *
